Kenneth brought me to try Katong Laksa after we collected our side table from ScanTeak. So hard to find a parking lot. So I told him.. I will try to cook homecook laksa for him during wkend. So I went to market to prepare all the ingredients.
Ingredients:
- 6 Hard-boiled eggs
- 2kg Chicken drumsticks (for the chicken stock)
- Prawns (to be boiled)
- 500g Fresh Crockles
- 100g Dried silver fish (no dried shrimp as I am allergy to it)
- Tao-ge
- 1 cucumber to be thinly slice
- 1 carrot to be thinly slice
- Thick bee hoon
- 3 Fish-cake to be thinly slice
- Fried Beancurd
- 1 pack of Coconut milk
- Mum's special chilli
- and of cos Laksa leaves
Preparation for the Gravy
- Bring the chicken to boil for 10 mins, keep the chicken stock
- Stirred-fried the silver fish till fragrant
- Add in the thinly sliced shallots & 2 spoonfulls of garlic & Chilli & laksa leaves
- Fried till fragrant
- Add in Chicken stock to boil
- Add in coconut milk
- Add in fried beancurd
- Simmer for 30 minutes
Cooking for 1 bowl
- Boil the tao ge and bee hoon
- Add shredded chicken, prawns, hard-boiled egg, thinly slice cucumber & carrots, crockles and fish cake
- Add the gravy
